Bacon Pizza Subs

For all the bacon & cheese lovers out there, this one was posted following a conversation after declaring his love for both bacon and cheese.
We're being versatile here and using Subs as they're easy to handle, cook quickly and multi-functional.
We've used bacon medallions here to reduce the fat content (yes fat is healthy but you don't need bucket loads of it!)
A real comfort food classic conjured up in minutes using minimal ingredients with maximum taste.
Feel free to add more/other vegetables you like!
Here's what you'll need for this one:
-2 Sub rolls, sliced into 4 quarters (Promise brand)
-40g of cheddar cheese (or Violife, if dairy-free & EatLean brand if you're trying to lose some)
-3 bacon medallions, partially cooked in the oven for 10 minutes @ 170 degrees Celsius.
-50g of Mushroom, sliced
-50g of Red onion, sliced
-20g of Jalapenos, sliced
-200g of tomato passata
-1 tablespoon of mixed herbs
-1/2 tsp of garlic powder
-1 tsp of Worcester sauce
-1 tsp of balsamic vinegar
-Salt & pepper to season
Here's how to make this one:
In a small bowl, mix together the tomato passata, mixed herbs, salt, pepper, garlic powder, Worcester sauce & balsamic vinegar.
Use a small spoon or a cooking brush to spread the passata evenly over the 4 sub rolls.
Add a small layer of cheese to each sub roll half.
Slice up the cooked bacon medallions into small slices.
Add the sliced bacon & all your chosen toppings to the sub rolls, evenly distributing them.
Top with the rest of the cheese, add a few extra drops of Worcester sauce & place carefully onto a oven tray.
Oven bake the sub for 12-15 minutes at 170 degrees Celsius.
Once cooked, serve on top a plate and use your favourite dipping sauce to enjoy!
